I don't know how thick the gurney is but if all else fails, drill the head off with a large diameter drill bit - stop as soon as the head breaks loose (no damage to anything), then remove the gurney completely and get some grips on the remaining bit of stud :like:

And if that fails ...

Drill the head off like a rivet. Use vise grip to remove the protruding threaded piece.
