Correct me if I’m wrong, but surely a 285/35 sidewall on a 20 is the same as on a 19

But a 285/35-20 will be taller than a 285/35-19, to get an equivalent tire diameter (which is what you should shoot for) drop from a 35 to a 30 series for 20" wheels & tires, or go to 40 series with 19's.

Tire selection and looks maybe (arguably) better with 20". Everything else is better with 19's. But at 285, tire selection is about the same.

For sure, I was commenting on a previous comment that the 20” will have a shorter side wall. My comment was that whether it’s 19 or 20, the side wall on a 285/35 will be the same.

Correct, but if you want to keep the overall diameter the same, the aspect ratio will have to be lower on the 20" compared to the 19", which will decrease the sidewall on the 20" tire.

OP, go with what you think looks better. People make far too big a deal about wheel size affecting performance. As long as it's a lightweight 20" wheel with good tires I doubt it makes any difference.

Wheel diameter is an important factor for many reasons, including weight (rotational mass), tire availability, brake clearance, cost, and durability (ability to withstand constant abuse from the street, autoX course or race track). Wheels and tires are some of the most important components to consider when attacking chassis setup, and each iteration will absolutely have a dramatic effect on the way the car feels and performs.

As many have already described, this is a personal preference - everyone enjoys their Mustang in a different way. Before we recommend a wheel and tire fitment to our clients, we have a conversation in regards to their goals for their car, how the car will be predominately used, what tire size and type they would like to use, and what their budget looks like. This conversation varies greatly from make and model of course, as each chassis responds differently to wheel and tire specifications.

The short of it is if you will be using the car for spirited driving, autoX or high performance driving events (HPDE's), however still put emphasis in the aesthetics department, 19" wheels are a great way to go.

Hardcore track enthusiasts and racers prioritize performance and efficiency (function) over all else, and will use either 18" or 19" wheels depending on their specific needs.
