I have a 2017 GT that I’ve upgraded the intake manifold to the GT 350 manifold and 87 mm throttlebody. Throttle response is very sporadic throughout RPM range. It’s like riding a bucking horse. Almost undrivable The only time it seems to run smooth is when I’m wide open throttle. It’s been tuned by two different companies and I’m still here having the issue.
does anyone have any experience with this?

Most tuners have trouble making the 87mm throttle body drive smoothly. You might be better off going with your stock unit and an adapter to work on the GT350 manifold.

But would a throttle body issue, cause a P0300 code which is a unspecific misfire code.
I’ve change the plugs. I’ve had to coil packs verified to be good and the injectors are being tested tomorrow.
