I'm not sure if the vacuum on the Mustang GT is manifold vacuum or ported vacuum. If it is drawn in ahead of the throttle it is ported. Throttle opening affects ported vacuum the opposite of manifold vacuum.

It's important to remember that manifold vacuum is used to power vehicle systems that need a steady supply of low-pressure air under all engine operating conditions. These systems include power brake boosters, a/c vacuum motors and some emissions controls.

Ported vacuum is used to control vehicle systems in relation to engine load. These include old-fashioned distributor vacuum advance diaphragms and carburetor assist devices. They also include many emissions control devices and transmission shift points. Under some engine load conditions, ported vacuum may equal manifold vacuum, but it can never exceed it.

You can find it by Googling: piston engine vacuum basics.

You opened the throttle and created your own vacuum leak so to say. Your car is operating normally. Vacuum is created in the engine with the throttle plate closed. There is little to no vacuum reading at the gauge in wot as air is rushing in to fill the cylinders.

There's little to no vacuum with the engine is just under load, so nothing is wrong. That's why many vehicles have a vacuum reservoir, and brake boosters are that big :).
