Just picked up a new GT500. I'd like to have some street fun and trips to the strip. No power mods planned. Are the Toyo R888R 315/30ZR20 the tire I want out back? Any issues running the stock fronts with these?

For stock I've been told they hold pretty well and they handle excellent.
Match them up front if you can, different grip will change the characteristics of the car if you throw it into turns hard

Do they make a 295 for the front or only a 285?

No... but you could 315 square it.... 11 inches is fine for 315 according to Toyota. That's all up to you. I sont want to recommend it

Yeah for price and fun/strip I would think the 555r2 would be better suited. Road course is where the 888r shines

Is it ok to do that on stock wheels or are the stock wheels staggered?

i have oem front tires and r888r rears. they can get a little hum to them, nothing exhaust on normal or above wont handle, or a low volume radio on. other than inhibited wet traction, no other downsides. phenominal grip even stock and up to about 800rwhp
