What temp are you quoting? Coolant temp or CHT?

Is there a question here or do you just want people to know you are using the wrong thermostat?

Did you remove the Coyote and install an old school 289 with Holley carb?

A 160* stat is too low.

Are you N/A, turbo’d or supercharged?

If N/A Coyote, you risk the chance of causing more harm than good to the engine if using a 160 stat (seriously).

Popping in a 160 stat years ago was the “fad” for the older 5.0’s, until it was found that doing such a thing in a modern computer equipped N/A 5.0 has absolutely no benefits and causes detrimental effects internally, such as shortening engine life (due to cylinder wash out), bad fuel mpgs, not allowing the engine to get to optimal temps and many other issues.

Even most thermostat manufacturers will have FAQ posted and tell consumers to pick the right thermostat and not one that is too low.

Here’s a good article from Reische Performance:

Nice write up but I didn't read anything that was truly negative about running a 160 other than fuel economy and oil being not warming up. I live in north Carolina so it won't get that cold. Plus I rev the shit out of my car it usually runs high 190s. I don't drive every day because I am retired. So if its really cold out I will stay in my warm house.
My car is N/A 18 manifold, long tube ,373 gears. I monitor all my gauges and installed a water temp gauge and oil pressure. If I see that my engine is not warming up enough. I will have the tuner adjust my fan to turn on later. If anything I swap out to a 170 which they recommend!!

I am constantly at 195-205F with the stock t-stat
I get around 199 if I really get on my car especially around town. I like whining my gears out.
