I see various size throttle bodies for sale. Which size would improve the giddy up and what am I looking at to have one installed? ( I assume it is not a plug-in an play option,)

That’s one of the easiest mods you can do. Unplug the factory TB wiring harness/connector, remove the 4 bolts, install the new TB (reusing the 4 factory bolts), plug the factory wiring harness/connector back up, torque to 89 in-lbs and you’re done. I think Soler Performance may have one for sale already.

No tuning or anything. What size is recommended?
My car is a 2019 Bullitt (which has the GT350 intake manifold). I actually sent my factory TB to Soler and they ported it to 91MM and no tuning was required.

I would skip the tb and get a tune instead.

I would skip the throttle body honestly. The stock TB isn't nearly of a restriction as some other items that can be done. Porting your manifold, exhaust, e85 tune among a few others would be great starting points to get a few more hp out of the car. Just the tune alone, depending on whether you're a 10 speed or 6 will be the best bang for buck out there. Like one of the flash tuners?
Pick a good reputable tuner and have them remotely tune your car. I recommend adding all bolt on performance mods that you want before you do, whether that’s headers, x or h pipe, axle back exhaust, cold air intake kit and throttle body or any combination of the aforementioned. That way when the tuner writes your tune, you can gain maximum benefit from all mods, especially E85 if you’re open to that.

The device is just used as a tool to upload a custom tune or to data log.

If you have e85 available in your area tuning for it is by far one of the best bang for your buck mods. Add long tubes for extra grunt.

I would skip the tb as some have mentioned. Sure up the IRS or some better tires and weight reduction would be more beneficial too.

As Stephen said. You wouldn't see much gains with a throttlebody. Your money would go a longer way with investing in a E85 tune, ported manifold, cold air intake, or headers.
