You don't have to title a car to sell it before it hits the dealership... You could make a simple arrangement between you, the buyer and the dealership. As long as the dealership gets what they want, they usually don't care.
This arrangement is nothing new and it has been going on since the 350 order banks opened. More than a few 15MY 350's switched hands this way.
As for choice... I have an R on order and will get the rear seat add for my kids and take it out on track days. Sell the tech and get the R... It's that simple.
You will kick yourself in the rear many times in the future if you don't.
