A single caraway seed ruins the flavor of everything.
Haha, moderation is key. Ever have Kuminost cheese? If not, try to find it, maybe at a farmer's market or specialty food/cheese shop.
It's like a gouda type with caraway. It is heaven!

When my baba was teaching me to cook, she always would say "when it comes to caraway, a little will do. If you think it's the right amount, cut it in half."
Her philosophy with dill was the polar opposite - more is better!

Hahaha lol, worked for me - with my wife. She is a master in the kitchen and knew we were a perfect match because I could cook as good as her. Just celebrated 20 yrs cooking together!

Oohhh yeah, you gotta be careful with the caraway! My wife, who is of Italian descent, and an amazing cook/baker, wanted to surprise me with some homemade rye bread with caraway seed. I grew up in Western Canada, lots of Ukrainian and Polish (I'm 50/50), and rye bread with caraway is Holy :).
So, anyway, too much caraway and it had too much of that sweet taste...BUT she salvaged it and made garlic bread, which we all enjoyed including her very picky, food-snob "Italian food is the best" family.

Chorizo? Adventurous!
I make my bigos with beef short ribs and I toss in a little extra stewing beef chunks - to die for!
I love rye bread with caraway seeds. I loved my bigos before the other day too.

Right away I knew the chorizo was not going to work. In the end the flavor of chorizo with the over abundance of caraway killed anything there was to enjoy with that stew.

Not that I make it often, but I've always stuck with pork. Usually a couple types of kielbasa and some bacon. A beef mix sounds real good.

Thanks it was smoked 5-6 hours at 225 I froze 5 of the racks in sections for future meals
