What is the proper procedure when downshifting multiple gears? I drive with rev match turned on and I usually just push the clutch in then will downshift through every gear till I’m were I want to be. For example- I’m in 5th, I push clutch in go to fourth, then third, then second, then I let the clutch out. I believe what I’m doing is unnecessary and I can just skip to the correct gear that I want to downshift to (being that the rpms won’t be crazy) but I wanted to make sure first.

yep you can skip the gears and go, as you say rpm permitting from 5th to 2nd. Bit extreme but video below shows it fine

or down through every gear but letting the clutch out between gears

of course on a sequential box you have to go through them all anyway, even when you forget to shift down before the corner! Aussie V8's, now with Mustangs but none in the videos posted (but you guys know this)

If you are going to keep the clutch depressed anyway, no need to go through every single gear.

I have a feeling that if you're always looking ahead to what gear you might need (or want) the car to be in, you won't have nearly as much problem choosing the 'path' you move the shift lever through to get from the gear it's in to the one you want it to be in.

The only common reason I can picture for needing to go from 5th to 2nd involves approaching a traffic light that has just changed and you have to slow because the traffic that was stopped for the red isn't back up to speed yet. Most times, I suspect a direct 5th to 3rd downshift (with rev-matching, either yours or the car's ARM) is going to be enough. The rest of the time, when you find that 3rd isn't low enough, do your 3rd to 2nd as a completely separate downshift.

Shifting isn't so hard that keeping the engine at whatever rpm provides adequate response for you is all that difficult.
