As long as your track is not dusty a run or two won't hurt anything.
I could datalog and make sure I am not running lean. What would be considered lean for e85?

Pulling your filter will not cause it to go lean. Even if it flows 30Lbs more air the computer is calibrated for it. I think it is good to 86Lbs of air before it hits a limit. If you change the tube size that will cause an issue, removing the filter will not.

The only thing to worry about is dust in the air.
