Wondering if anyone else has these issues and what the fix is.

The plastic cover for the front interior lights rattles from time to time. Same thing with the aluminum trim that goes across the face of the dash.

Surely I can't be the only one that has experienced this. Any options?

I have a 2020 GT, I had a couple of rattles that seem to be coming from rear passenger side window area.
I was able to find it by sitting back there and shimmed it with black thinly cut soft insulation rubber.

they make something called "Tessa tape" its cloth tape you put on surfaces that meet so its super thin. you can put tape over the trouble spots. oem's do it all the time where 2 panels touch to prevent squeaking.

I have the same problem. Could you amplify your procedure?

Stick double-sided 3M tape inside and push it hard to the ceiling. It will stop the door-entry lights/map lights plastic from moving around on the ceiling.

For the rest of the trim, including the small plastic square of that rests above the steering wheel, you can use "cloth tape" AKA Tesa tape from Amazon. Just take a small square and cover any of the trim connector tabs before putting them back in the dash. You want tape between any connection points between the trim and the dash.
