TL/DR: Aftermarket noob, looking for a "Tuning for Dummies"

I really hate to be the new guy on the forum asking a basic question that has probably been asked thousands of times before, but my searching hasn't yielded the results I am looking for.

I have a '16 GT with basic bolt-ons. I live in MN and have easy access to E85 and would really like to run that. That said, I really have no idea the "process" of making that happen. I look at tuner webpages and they ask questions I don't really know the answers to. What are the reasons I might want a HP vs SCT vs BAMA vs whatever programmer? And then obviously there hundreds of tuners I can work with. Just overwhelmed by it all and curious if someone has done any sort of a write up that would walk a n00b through it? Or is there a tuner that will be nicer at walking an idiot like me through it?

All those tunes are basically the same. Any tuner can get you a flex or e85 tune. Or you can purchase a kit that allows you to run e85 without a tune
