I bought My 2016 GT350 about an hour after it was delivered to the Dealer in Apopka, Florida in Dec. 2015. (I was waiting for it)
This car had (0) options with it, (except the 1300 gas guzzler tax)
Being I spent 14 years as a Ford Registered Technician, I wanted to do any/all work on this car myself. Well, I almost did, except for the Engine oil-cooler line Recall under warranty.
I performed over 28 mods on this car through the last 7+ years, some were more challenging than others but always fun/exciting.
Now with 32,000 miles it is still very powerful with no issues.
I'm not sure anyone could persuade me to part with my weekend-driver.

I have done that drive many, many times. And every time I see something 'new'. The last time I drove it was in my '98 GT & it was the 1st time I ever drove it north from Malibu all the way up to Washington state. My next time up will be in the 2019 GT.
