I have a 2015 3.7 v6 in Michigan. It has been an extremely cold winter. The heat has been noticeably going from warm to cold dependent on the speed or rpm’s, getting much cooler when I am stopped in traffic. Is there a sensor or something that I can change out to resolve this?

Have you checked your coolant levels lately? Used to be the symptoms you are describing was a sign of low coolant or, possibly, a weak water pump. I think it's unlikely that a sensor is the "cause", rather an "indicator" of what's happening.
Of course cooling systems have gotten quite complicated in newer cars so maybe something else is going on? 🤔
