Looking at a gt350
So to finish this off:

Cylinder head temp is about 15 degrees warmer than coolant temp (surprised there is no coolant gauge; I used a blue tooth obd ii).
Temp without AC got to about 222 as a high, but mostly around 219; it was 91 degrees outside, in light to light traffic.

When I turned on the AC, the cylinder head temp went down to 205-207 on average, low of around 199-201.

my experience is CHT is more than 15F higher than coolant temp. My guess is more like 25-30F.
