I'm oscillating between those (or similar @ $150ish) and the GT350 rears along with the M1 front lip mouldings, for a total of $400ish.
I was going the Mach 1 front lips but some they don’t go all the way down the wheel opening i passed.

295 on the 11 inch rear rims, does the tyre look stretched at all?
It won't. When you think about it, 275 on 10" is fine, ergo 295 on 11" (+25 mm) will also be fine. The stretch will be similar for both, it is there, but small, looks fine.

When you check the specs of the tire here, rim width range is 10-11.5" with measured rim width 10.5". So at 10.5" wide rim the tyre has defined width. As was mentioned here in some topic earlier, for good performance you want the rim to have at least measured rim or slightly more. So 11" really looks ideal for 295-305 width.

What's the feedback on the M01 4's tyres, I know they are OEM for Mercedes, are they regarded as a better tyre (performance/wear rate) then the standard Pilot Sport 4's?

From memory you cant get a 295/35/19 4's without M01.

No clue. There was no indication when ordering that they were "MO1" tires. I highly doubt it really means much difference when compared to other 4s sizes etc. It's probably just another way for MB to soak its customers for a few more dollars, kinda like their overpriced motor oils and the like.

Yeah, I watched that last night. Still not enough detail there to make a determination on the "MO1" designation and I haven't been able to find any other info. Ah well, if it's good enough for an AMG it should be good enough for a Mustang.

I guess I'll find out.
