So I installed some eibach sportlines yesterday and while driving it today it doesn’t feel quite right. It doesn’t feel as responsive on the gas, or quite as fast, almost as if I have to give it 10-15% more throttle to get to the same acceleration as before. Don’t know if this is just in my head or if it could be caused by a tire rub issue? There’s no sounds that I can hear.

if there’s anything I should check out please let me know

You're probably experiencing less "squat" from the rear suspension (and less nose lift). Can't think of any other reason a spring swap should impact performance.

Did you install caster/camber plates, upgrade the shocks/struts and a full alignment?

No I just did the springs, I didn’t get an alignment yet that is scheduled for two days from now. Could it be the alignment, possibly pointing inward making it drive like that?

Buy just going with the springs and no alignment with caster camber plates and possible toe-in as well as running the OEM shocks you have seriously disrupted the suspension geometry.
