Remove the sensor and place it in 245F water
This would not be easy to do without a way to pressurize the container.

Quick and dirty way to find out is; when the car is reading 245, or whatever, shoot the top of the radiator with a laser temp reader. If it is close to 245 then it is reading correctly. Could aim it at the front of the head also.

It will be tricky. It might need to be done with a liquid with a higher boing temp. A second option is insert the resistance into the connector that equals 245F. The test will inform whether the PCM is making the correct readings but still leaves the sensor unknown. An IR thermometer is also a good idea while factoring emissivity for the reading. 👍
