CHT and coolant

Where are your CHT’s during prolong idle?
Today, casual drive home in 98° heat, temps got up to 260.
I got a water pump on the way with new pulley and belt. Suspecting that's the issue since temps stay normal on cooler days.
Pump is probably not flowing correctly

Not sure if this will be helpful, but I posted this back in 2019 - TSB 19-2049 from Ford - faulty CHT sensors in 5.0’s:

I know OP doesn’t have a 2019, but that’s not to say that a faulty CHT can't exist in any Coyote 5.0.

I wouid check the harness to the CHT, check the pins in the connector AND do a continuity test of the actual CHT sensor to make sure it's in spec before throwing parts at the car.

Thank you for the links. Seems like a straight forward job.
I'm not suspecting a fault sensor since temps aren't all over the place constantly. They seem steady on cooler days and super high when it gets hot. Today I saw 260 on my way home in 98° heat
