I recently changed my oil from Motocraft blend to Mobil 1 Full Synthetic 5W-20. Filled up with 8 quarts as recommended.

My engine response does feel different than before. Sometimes when I get going and just tap the throttle, the engine stumbles for half a second and then goes. If I roll into the throttle harder it does not seem to do it. When I changed my air filter before from an oiled filter to a dry one, the engine acted a bit weird, but then when I reflashed the tune everything was fine again. So maybe I need to do the same thing.

This is the first time putting full synthetic into this engine and I have 27,000 miles when I did the change. Oil pressure, level and temperature are good.

Has anyone experienced differences in how the engine responds after changing to another brand/type of engine oil? Or maybe this is all in my head.

You said you you had an oiled filter before? Clean your MAF.

Any danger in doing this myself? I have MAF cleaner.
No none at all. Unplug the MAF connector and remove the MAF. Spray the wire with the MAF cleaner good and let it dry.

Also do an ECU reset.

What's do you mean by wire? What wire? The MAF is flat silver piece. You're not talking about the connector right? The piece that actually goes into the intake tube right?

If you look in the MAF window, you'll see a small wire/sensor, for sensing air flow. Don't damage it, touch it etc...but do clean it well and let it dry out.

I'm sure when I pull it out it will make sense. Thanks!
