Hey guys,

I noticed that recently when I cold start the car after longer time of not driving it, if I let it sit for a minute or two I start to smell as if something was burning, not crazy, but enough for me to notice. It all goes away as I start driving.

Haven't figured out where it's coming from yet and if it's a recurring thing.

Has anyone noticed anything like that? Could that be the parts breaking in? Only done about 500km so far.

Yes, I think that will be typical new car / break-in smell and nothing to worry about.
It should stop soon under normal driving, but expect it to re-occur anytime you "give it some stick" up until the 1,500-1,700 Klm mark.
