I almost replied to that comment, but refrained. I have built a few 1,000 HP Whipple'd mustangs, so I know exactly where he is coming from. I will say, there is not one area that a higher horsepower GT/Bullit/ or whatever version you wanna compare, that can out perform, out do or whatever, compared to the GT500. The only thing anyone can legitimately hang their hat (preference) on, is no third pedal. That's IT, and again, that's simply preference and opinion.

OP, you have a very nice car. If you can't handle not having a third pedal, or swallow the money pill to get a GT500, then keep what you have. As I said, it's a great fun car, but it is not a GT500.

The meat is in the 30k forged engine and the 20k transmission lol. Did you take any turns by chance? I've driven a few GTs and the 500 feels like a completely different car to me...
Don't forget the brakes, wheel size and tire width not to mention all the suspension upgrades. Not taking away from the Bullitt or its potential when modded but it really doesn't sound like the OP read up much and objectively compared the specs between a 2019 Bullitt and 2020+GT500. Sounds like just a comparison to horsepower and perceived cost. The GT500 starts out as a very well refined package from the OEM with a warranty. I've got just as much money in my 04 Cobra that has more power but its a one-trick pony and junkyard dog compared to the total package that is the 2020+ GT500.

I'm 72 years young and I still act like a 16 year old gearhead. I don't have 50 years to watch a car get forgotten in a dusty garage somewhere. The Bullitt is my daily driver and it will be sold to make room for a GT500, which will then become my grocery getter and tire burner.
