I’ve got a 19 GT. Recently moved the engine fuse box and ECU to the trunk on the car to get ready for a tube front end and shaved engine bay. Started the car first try and made it around the block with no issues but the speedometer doesn’t read anything. I checked fuses, everything is good there.
I’m assuming it gets speed info from the transmission (MT82) but I can’t seem to find any clear answer on where the signal comes from or goes to. Any help is appreciated!

The car gets your speed from the wheel speed sensors. The electrical system in these cars can be very temperamental. Like almost all cars these days they vary the alternator demand based on system voltage. The fords also start turning things off to save power. If you can, put your batter back under the hood and see what happens. If the speedometer comes back, you are probably losing too much voltage across the wire from back to front and the computer is trying to make up for it.

Edit. I just read that you moved more than the battery, good luck with that.
