Does the ‘quiet’ exhaust setting noticeably lose much power compared to say the ‘track’ setting

Not that I know of, I think it eventually opens up when needed if you floor it. just slower valves in the beginning. Not sure if this is a good test, but I did try change all settings from quiet thru track going 75mph on a flat surface in cruise and I saw no changes in RPM at all or live mpg reading, just sound difference. I do know that some who run in sport/track mode almost all the time, get the inner tips more dirty and tarnished over time.

I don't have any hard data but even in "quiet" mode the exhaust opens up a lot at full throttle and high rpm. It may take a dyno to detect any loss in power but I can't feel it on the butt-dyno.

It's really a function of how fast you're going as to whether you would see it or not. At highway speeds, there's no perceptible loss of power.

In any event, the valves open up at higher RPM, over 3000 - 3500 or so. Not as fully as they would be in "Track" (they never get that open in any of the lower settings), but enough to pick up the volume and let the engine breath while you're accelerating.

No, there is no performance loss as the exhaust baffles are made to open up as needed to prevent performance loss (this goes for normal and sport modes as well).
