The Supercars on your 2007 weren't the same Supercars that were fitted to the 2014, so no better comparisons can be made between them than between your original Supercars and any other max performance tire or between the Supercar G:2's and any other extreme performance tire.

I've heard the later ones suck too, especially compared to something like a Pilot Super Sport.

The early ones were absolutely terrible.....

The floating issues are due to the soft bushings between the rear subframe and the body. The entire subframe along with the wheels attached to it literally floats inside them. Replacing those soft rubber bushings with solid ones (Ford Racing M-5872-M or BMR BK048) or at least reinforcing them (with BMR CB005 or Steeda bushing support) will address most floating issues. For even greater feel, replace the soft toe knuckle bushings with bearings instead (Ford Racing M-5A460-M) and watch the PP suspension really come alive. Stiffer springs & shocks might help a little but they will not address the real problem of a floating rear subframe which causes bouncing and wheel hop issues.
That's really great information. Are any of these preferable for daily driving use? I'd love a solution that made the vehicle more planted with minimal increase in driver fatigue or noise intrusion.

A (more) solid connection between the subframe and the car will increase road noise, tire noise, etc. You will feel the road (and the PP suspension) a lot more. From autox and hpd this is very desirable but it's a personal preference whether or not this is something you crave or you dislike. In my opinion any of those changes will not impact MY enjoyment of the car in daily driving, but of course YMMV. Use bushing reinforcements instead of replacement if you worry about NVH but still would like to do something about the floating feel.

Now if you add any bushing reinforcements to the drivetrain (like the Steeda transmission, shifter, differential, or the BMR differential, or the Ford Racing differential bushing reinforcements) then you will get a lot more engine and drivetrain noises which I don't like as much as the road feel, so I will probably skip on most of those.

unfortunately is only for the GT. Just out of curiosity, were I to put this kit on my eco, what would be wrong with the set up?

First thing that comes to mind is your front spring rate would be off. The weight of the V8 compared to the I4 is significant. Your rebound/compression would be too stiff IMO. Other than that probably not much.

So as long as I stay away from the springs and shocks/struts, everything else in this kit would be a go for my eco? I have eibach sportlines at the moment and it seems as though I've heard Viking for struts/shocks might be the way to go in addition to the K brace.

There isn't that much left if you stay away from springs and struts. :) You've got sway bars and the knuckle bearings and that's it. (assuming you have the eco PP therefore you already have the toe links.) And BTW the spring rates will also be incorrect for a GT convertible. The kit is only for the GT fastback.

what is price point of replacing rubber bushings and toe knuckle bushings with bearings (parts and labor)?

I believe 16 added a temperature sensor in the differential. Saw a thread on here where someone accidentally cut their wire to the sensor and some 15 owners said they didn't have the sensor in ther rear differentials
