Does anyone notice their 10R80 equipped Mustang GT skips 2nd gear in Normal Mode. My 2019 Mustang GT with 10 speed auto when starts from a dead stop goes from 1st to 3rd, skipping the 2nd gear when the drive mode is set to Normal, it does not do that in Sport+ mode, only in Normal Mode. Is it because the software is trying to get better gas mileage in Normal Mode ?

The 10-speed auto can (and was built to) skip gears on both upshifts and downshifts when needed. Sport/Track mode generally has it run through every gear on upshifts (but can/will still skip on downshifts AFAIK).

The 10 speed purposely does that. That's the main reasoning behind the 10 speed. Perfect revs for any situation and all those gears gives it that flexibility.

I never see 2nd and 4th unless I step as lightly as possible in the accelerator. As said above, it’s designed for this.

This is correct.

If you have the standard gauge cluster you can see which gear the car is in by pulling back on the + paddle lever while driving in the normal mode...pretty cool.

As others have said, it is designed that way. In normal driving under relatively easy throttle, there is no need to shuffle through all the gears as you accelerate. However, under heavy throttle even in normal drive mode, it will use all the gears. It is a pretty smart transmission.

The thing is that the car always starts in Normal mode, then you'll have to flip the switch to Sport mode, why can't Ford make the car starts with whatever driving mode it was on the last time, instead of default to Normal mode, just saying.

The toggle gives you sport+. If you just want to use all gears and have it hold them longer, put the shifter in S.

That's a good point, I forget there is a S mode on the shifter, I always put the shifter in D, duh.

My 2020 Mustang GT does the same. Autotrans skips gears depending on how you drive (Adaptive Learning). If you pick up your new car and accelerate hard the computer will register that and will skip second. I can get mine into second if I ease off on the accelerator at a particular speed and at any time with the paddle shifter. I don't think there is anything seriously wrong with the car if it skips second like that and is just a peculiarity of the way they designed the transmission. It does seem like the transmission hesitates until skipping to third when you gently accelerate and is a minor complaint.
