Looking to cover the stock 19" x 9" (F) 19" x 9.5" (R) with Nokian Hakkapeliitta R3, since I hear narrower tires are better in the winter am I better off doing 255/40/19 squared all around or should I copy the standard profile of 255 front 275 rear?

Any particular reason why? Just trying to hear everything out since I didn't get any consensus talking to Mustang people IRL.
Doesn't really matter. If you had square set of wheels, I would definitely do square (in fact - it's what I've done - my "winter" set is 255/40/19 DWS06 on OEM non-PP wheels (19" / 8.5" wide I believe).

If you're using stock PP wheels, you won't be able to rotate, you will affect gearing by having shorter rear tire (it actually drives nicer with the tall 18+ gearing and I personally like it).

I would probably do square, narrower rear will help with traction in the snow.

That's what the car came with and is designed for, no real reason to go 255 on a 9.5" tire. It's not going to make a discernible difference in the snow over a 275.
