So depending on the local weather here in CNY, I'm probably going to be parking my car for the winter. I'm looking at picking up some kind of car cover that hopefully doesn't attract vermin. I'm curious if (car was detailed before I drove it home +1k miles) I should wax and detail the car before storage for the winter?

Vermin will find a way to wiring and hoses no matter the precautions taken. Bet bet is indoor, or in a container. Way cheaper than wiring harness.....

I personally never put a cover on until the paint is perfectly squeaky clean. As in, zero driving after cleaning. Don't want the cover 1) to get dirt inside it from the paint, and 2) don't subsequently want said dirty cover scratching my paint on the install and removal steps... That said, an indoor sealed space with vermin protection all about is the best bet.. Or a car capsule of some kind. I personally don't let mine sit that long, if its a sunny 40 plus afternoon and the roads are clear, I take mine out every chance I get. Only in January/February do I put mine on a tender and let it sit for any extended length of time.
