Just wondering what is the point of the drive modes in my manual trans ecoboost? Obviously the steering is stiffer and the throttle mapping is changed, but do the drive modes do anything to actually make my car faster that I couldn't do by just mashing the gas pedal?

That's pretty much it. Biggest thing is the throttle mapping. Since all cars have electronic throttle control nowadays, manufacturers can give you 'drive modes' to give the throttle different personalities, all being slightly slower versions of 'track' or 'race' mode, which is the cars true nature. Interesting but mostly marketing gimmicks.

Once you're tuned, throttle mapping is in sport mode all the time anyway. To me, its more convenient to keep throttle response fast and crisp all the time and just change boost levels up or down for whatever circumstances you want.

As mentioned, it's throttle mapping and traction/stability adjustments.

Wonder why they don’t actual change tuning for drive modes. There are so many engine variables that go into the turbo’s performance/vs fuel economy it seems like they would. An eco mode would be cool..

The throttle maps however are garbage, way too sensitive for the type of throttle we have. Drive by wire really needs to have a heavier spring load on the gas pedal, its too loose. Every little bump forces shakey leg foot. With track mode enabled if you hit even a mild bump its stupid. Other than the TC nannies there is no reasonable excuse to use it on the MT. I just shut off Advance trac and leave it. For the AT guys its a bit more useful.

Agreed. I recently bought a 3rd gen 4Runner as my daily and it was nice going back to a throttle cable setup where you can actually feel some feedback in your foot.

An eco mode in a stang? Kind of odd but i guess it would be nice on long trips

Cobb tuners come with an eco mode. All it takes is a couple of pushes on the cruise control buttons to turn it on. I use it all the time.
