I'm installing a Vortech V7-JT head with 3.33" 8-rib upgrade on a 2017 5.0 Coyote. Want to use an ATI balancer, for which there are two offered. The 10% one is 7.48" in diameter and the 15% one is 7.795" in diameter. Anyone know if the both will fit?

Either will fit. You will need to grind the OEM tensioner or buy the ARS billet low profile tensioner.
