For big mods, I'd start with a GT. A GT350 is pretty fantastic, but it's more dialed in as a track car OOTB, and just from a collectability/retained value standpoint (i.e., a Shelby), I'd leave one more or less stock.
Also keep in mind - especially with your location in Orlando (I'm up in St. Aug) - the GT can be had in a pretty sweet convertible, now with the PP as an option. However, if you wanted a supercharged cruising weapon, an auto with a Whipple, maybe a little suspension, wheels/tires would be pretty outstanding.
