It is easier for movie productions to use cheaper/base models of Mustang/cars and dress it up and "enhance" the sound of the exhaust or actually rent a local car to use for a scene (if there is no stunts).
Getaway - Suppose to be a Shelby GT500 SuperSnake. However the main car doesn't have the SuperSnake wheels, just the base GT500 wheels painted black. Then when they do the stunts, the stunt car is a V6 Mustang (no GT500 body kit) with the same paint scheme.
I am Legend - Used a Real GT500 however it was as an automatic.
Death Race 2 - Used a Real Grabber Orange GT500 SuperSnake, however the weird thing is, the chase scene with the SS, it sounds like a V6 haha
