Also took photos of my dogs that were being lit by the setting sun through the window but that was more difficult as the camera metered the light off the bright parts of their fur(Boston Terriers that are black but with some white on their faces) so I had to switch back to manual for that.
In situations like this, if you want to stay in aperture mode, you need to switch metering from MATRIX to SPOT. That was the point I was making earlier. the camera is not sure what your subject is in matrix mode, so it just averages out the entire frame. If you have a little black dog in an other wise well lit scene, the dog will be way under exposed. SPOT will account for the dog, but may make the rest overexposed. Manual mode if you know how will give you the best of both worlds.

I didn't spend too much time with the settings as the light only lasts about 10 minutes before it no longer shines through that window and I just wanted to play with the camera for a bit. I've done a shoot with the same setup on manual in the past and the shots came out quite nice IMO.

Sorry not cars but gives an idea on how the metering works.

These were done intentionally:

This one shows how the standard metering can get confused, also in the same spot at about the same time of day. Also this one is not edited whereas the first two were tweaked in Photoshop.

New to this but appreciate any feedback :) Had my first play around with Lightroom this evening after signing up for the monthly Adobe Creative Cloud subscription thing. Looking forward to learning how to use it properly but considering I was randomly clicking on things, I thought this shot looked ok...
