I tried searching the threads and did not find an answer to my specific question but please post it here if this is covered.

Does anyone have a "plot" of the throttle response curves for each of the 4 selectable drive modes for the GT based on accelerator pedal postion?

You're going to need someone who has access to source tuning software like HPTuners. If Ford's mapping is anything like other manufacturers - it simply increase the % of actual throttle given versus throttle demanded.

Any idea if any of the modes are linear?

It depends.
Like I said, I haven't personally looked at Ford's throttle mapping via drive modes - but I have seen other manufacturers' versions.

There is a table / formula in the tune. Based on engine temp, speed, etc etc - the ECU gives a percentage of the throttle asked for (by pressing your foot on the pedal). Everyone I've seen is only based on part throttle. Full throttle is full throttle - of course unless some other system is interdicting (traction control etc).
