Legally, stability and traction control always have to be on when you restart a car.
But Sport Mode doesn't turn anything off, just changes the parameters, correct?

Exactly, it lowers the intervention thresholds, but read the quote I posted right above yours. Any TCS/STM system must default to its full, "normal" settings upon start-up.

Man, it's so good we have the federal government to take care of us. We'd never be able to choose an appropriate traction control/ drive mode setting for current conditions without help like that.

Man, it's so good we have the federal government to take care of us. We'd never be able to choose an appropriate traction control/ drive mode setting for current conditions without help like that.
Eh; I prefer it that way. Better that than accidentally leave the stability control off and spin out because you took a corner the way you normally would with nannies on.

I guess I just don't see the big deal about reaching over and flipping the toggle switch. Seems pretty easy to me

Look at some of the tire comments.
People blaming the pp tires for whiskey throttle.
"Please for the love of God change out these deadly tires"
I could just see the same or worse if the car didn't require a manual reset.

Go look again. Some of those people also claim to drive everywhere in sport mode. It blows my mind.

OFF-topic:
Nobody is blaming anyone to be correct. People like me still asking the possibility to choose A/S for the Performance Package as part of the order process if delivery would be after September for example. We are in the 21st Century were people like to choose. Some younger members forget that the 1st Mustang had much more choices than the "pre-packages" from Ford these days. Looking at the tire warning - "don't use the summer tires under 50 degrees Fahrenheit" - shows that A/S would be much better and IMO would have saved some Mustangs to get dents! California / San Diego area had 30 degrees last couple of days.

In my case - I had to switch to winter tires anyway.

Yes. I have to switch every time the engine is off back to "snow/wet" mode because it switches back to "normal" mode. I would like it, if it would stay in the last mode I did choose start driving. We have a little bit longer snow and ice up NORTH than only the time driving to work. I am old enough to see if I need normal mode or snow mode.
