The insurance company MIGHT accept them in exchange for covering the aftermarket wheels. But don't count on it.
Like I said, they've agreed to cover the cost of the aftermarket wheels anyway.

Gives me the option of selling the standard ones I currently have as I will receive a new set of standard wheels with the new car in September (probably sell these as well to go towards further mods).

If they insurance company agree to pay out for the wheels, they'll want to cover their costs somehow, probably when your renewal comes up!
