Update (with not so good news):

On Thursday, my service advisor called me offering a Ford Bronco as replacement. I told him that I didn't need it for one day (the latest ETA was Friday).

On Friday, I called the service manager, and he told me that unfortunately the car wouldn't be ready. I shared my frustration: I had said no to a decent replacement car the day before, I had plans to drive the Mustang during the weekend with some friends, and he had given me his word that it would be ready. He apologized and said that we can chat next week when the car is ready: it looks like it is a "parts not being available" issue. After that, I elevated the issue with Ford

Extremely frustrating situation. Never bringing the car to this dealer again (even if they offer me free services). I'll make sure to leave them a horrible review and make sure that Ford takes some measures with them
Doesn't sound like something a horrible dealer would do. Like sure, it's disappointing, but they've been quick communicators. Not sure what they could have done better if the reason it's not done is out of their hands.

The problem is that they had committed on having the car ready by last Friday after 3 weeks of not looking into it. And they keep doing that...

As a last update, the car was supposed to be ready yesterday. I called before going to pick it up, and they said that they didn't want to take out the bumper to check the radar because "it was not stock". I showed them that it was just a vinyl and an OEM PP2 splitter purchased from Ford, and they answered "oh okay. You'll have it ready by tomorrow"

I've checked on the Ford app, and they have put 90 miles on the car only today. I don't know what is going on, but my blood is boiling right now.

Last update (the nightmare finally ended)

Went to pick up my car today. When I was picking it up, the receipt didn't reflect the 81 miles that they had put on the car; it only had ~15 I believe. I asked for an explanation, and they corrected it.

I went to the car to check the dash cam, and I saw what I didn't want to see: pulls, driving the car at 85 mph+ in the freeway, etc. All of it to (supposedly) check that the adaptive cruise control was working.

I got extremely angry and I asked for an explanation to the general manager. He told me that he would investigate the issue, and that they had acted in goodwill repairing my adaptive cruise control (it seems that the sensor had fallen off because I bottomed up). In the meantime, I have opened a complaint with the Bureau of Automotive Repairs in California

The end of the story: when I went to turn on the car, the battery was dead. I asked them to fix it immediately, and they jumped start it. But I wonder if I will have a battery tomorrow

Long story short: dealers can be a nightmare some times. This one was a really big one

Thanks for sharing, good luck, and I hope to God I never need my extended warranty. Have not been to a dealer for anything, the one I bought from closed, and I'd rather pay my local shop than deal with that kind of crap. The Cadillac forum used to have corporate chime in with an offer to help in situations, but have not seen that in a year or so. Seems like the new universal excuse now is "supply chain" issues.

They are thorough.

Yeah, the ACC seems to work at 30 mph. But does it work at 35 also? Hmm, yeah, 35 is ok too. How about 40? Not sure, have to check ... 50? 80? 85? Yeah, ok, seems to work. Not tested at 90 mph though, so no guarantees at that speed, but you should not be driving at that speed anyway.

Thorough is their middle name, and doing pulls in customer's cars is their game.
