So I was all prep'd to change the fluid in the diff, got my fluid, a little pump, a 3/8" extension. But man that bolt did not want to come out on the bottom. Is there a trick to this or do I just need to borrow some muscles?!

You may try doing this right after a long drive.
The plug will probably be able to be loosened easier if the cover is hot.
Aluminum will expand more than steel when it is warmed.
