With the temps in the mid-80's around here--and A/C off--the coolant temps is around 200-205; with the A/C on it drops to around 185-190.
This is running on the Interstates around 70-75mph on cruise.

Assuming the numbers are correct, what does turning on the A/C do to lower coolant temps?

Turns the ac condenser fan on and probably opens up the active grille shutters

Makes sense--I'll have to pop the hood after is fully warmed up and then turn the air on the see what's going on.
I was surprised at how much the temp does drop.

I believe that ford runs the engine slightly warmer for fuel efficiency reasons under light duty

On a slightly related topic has anyone noticed that the ecoboost pulls harder with the AC on, most all the cars I had before the opposite was true.

Too much inconsistancy with turbo cars, in my opinion. Im just glad that the power doesnt noticeably suffer with the ac on!

It feels like every other car has in the past. I can tell a difference (for the worse) when it's on.

Every car I have owned including my Ecoboost when you go to WOT the AC compressor cuts out so as to not suck away power. And like every other car I have had you feel a negative impact to power at part throttle.

Cars well up into the 80's would not turn off the compressor at WOT. Some into the 90's wouldn't. I remember turning it off manually in my dad's car in the early 80's when he pulled out to pass cars on 2 lane roads. It made an obvious difference on low power cars.

Do all Mustangs have shutters? Or just the EB's?
Just the EB. I think the extra room under the hood due to the smaller engine makes for turbulence/more drag IIRC.

That is quite likely but my 85 Daytona Turbo, 87 Ford Tempo, 89 Shelby Daytona and 89 Dodge Dakota did. It may have been based on whether the car had fuel injection or not. fI vehicles have a throttle position sensor so it would have been quite easy to do it.
