I've used the rear jack stand locations many times with no issues on the rear subframe where the purple circles are. As long as you don't use the control arms you should be pretty safe, the K member is strong.

IMO best option is to get jacking rails, doesn't matter which ones. Then put one stand on the front of the rail, and the rear stand on the pinch weld where you'd normally jack up the rear of the car. This gives you great stability and flexibility.

Can you get your car above 12” under front and rear tires ? I have a chance to get a set of 12” high race ramps I am wondering if I could get the car high enough to youse them with a regular low profile floor jack and jack stands?

That all depends on the approach angle of the ramp.
