After having my 2016 Convertible, I love the interior improvements over the 5th Gen!

Dash: I actually like having the large "plain" part - it's more relaxing to me. All the buttons being centrally located under the radio screen are very convenient to me. And the number of options when configuring the digital speedo area - unreal!

Vents: I've found that focusing the A/C vents on the center of my body with a larger vent, I get cooled off quicker than in my 2012 when I had the smaller ones going towards my face.

Seats: No comparison on the improvements - Very comfortable. I like being "encased" a little more in this car than I was in my 2012.

Visibility: Adjusting the mirrors properly, I still have no problem with visibility.

Plastic: I don't mind it on the doors, but the hump over the center needs to go, regardless if it's a tribute to earlier models or not. And the "kneepads" are basically hard plastic with a VERY thin layer of padding. Not worth any extra money.

I do like the Mustang's storage capacity much better. And the separate levers to switch between modes are a great touch. With the Camaro, you have to push the button & cycle through the modes - it's easier just to flip a switch.
I had a 2011 2SS/RS. Anything was better than that interior. One of the biggest reasons I got rid of it.

You are going to ruffle some feathers ...There is or at least was a fairly sizable contingent on the forum that swore up and down the Mustang is on par with BMWs interior and that there were droves of M3 buyers were considering mustangs....

I love the Mustang but I still havent found a buyer that switched from BMW to Mustang....I have seen multiple Mustang owners move to BMW, however.
My previous car was a 2013 BMW 335i M Sport and. I now drive a 2016 Mustang GT which I prefer to drive over the BMW.

The interior of the Mustang is more sporty to me with the rounded guages & silver trim. The BMW Merino leather is better quality no doubt but it is also stiffer. I prefer the softer Mustang seats and we'll see how it wears.

My BMW was $20,000 more than my Mustang and you can't justify the extra money really. Especially if you want the V8 engine sound which I did. I tell my friends that the BMW was just too tame for me whereas the Mustang is a little more edgy & raw. The Mustang ride is softer and since this is my DD I prefer it.

For an amazing interior go look at Mercedes. I looked at the C63 AMG and again for the price couldn't justify it.

I almost got the Kalahari interior on my car, but went with white instead. I recently noticed the "Saddle" interior color for your mustangs - I like the darker tone of the "saddle" vs the "Kalahari" color. IMO, the darker saddle color will probably just look better over longer periods of time.

Some of us don't like having a giant scientific calculator, a phone keypad, and a computer keyboard for a center stack.

And if Ford tried hard enough maybe they could squeeze in 88 more buttons on the steering wheel.
I like the buttons. In fact, I prefer the base center stack over the premium precisely because of this. All this new-fangled touchscreen sh*t is irritating to me. Knobs and buttons are more comfortable and familiar. Though I partly agree about steering wheel controls. I find that I almost never use them anyway. But Ford did a nice job of tucking them in, such that they don't really bother me either.

How is it overdone? If you're going to have the buttons, it's a very minimalist way to handle them. If you don't like, buy premium:

I count damn near 50 buttons on that stack. Not to mention all the outdated brushed aluminum and chrome.

Add all the buttons on the steering wheel and you have more keys than on a keyboard and calculator combined. Tacky.

You see that as over done the same way I see the Camaro as WAY under done.:shrug:
