I have a 2015 Gt Mustang Premium and I am having an issue with the a/c. The freon pressure line seems to have some kind of safety for to much pressure on line. I will fill up system with Freon and sometimes the compressor won’t kick in. I took it to the dealer and they pulled a little of the pressure out and it does just fine and is cold. Something is building up the pressure to a high level in the line while I’m driving and causing some safety to not let compressor to come on. I think the pressure in line is warm air or something like that till it reaches the Freon level in system. Any ideas on what could cause this?

Why did you add refrigerant? Have you put a set of guages on it? With what results? Has the system had any other work done? Really too many questions and not enough info to answer your question with any accuracy.
Things it "could" be are an obstructed expansion orifice, condenser or evaporator.
The first thing I'd try is to completely evacuate the system down to a good solid vacuum and refill the system with the correct weight of refrigerant.

The dealer told me that it’s possible the evaporator core could have a very small leak but could that cause pressure to build up in the system?

Excess refrigerant will cause over pressure and damage. Have you added refrigerant. If so why ?

Check under the bonnet what type of refrigerant your car uses, it will also tell you the exact volume to use plus the additional oil you need to add. If you have just used a diy kit then I would get it vacuumed out and properly refilled because you will have no idea what you have got in there.

Why do you think your system is building too much pressure?

A leak will cause the system to stop cooling not "over pressurize" the system.
A system with low refrigerant can, for lack of a better description, pulse between cooling and not cooling.
A system with very low refrigerant levels will not let the compressor clutch engage. The compressor pulley will always spin unless it has major problems.
A system with too much refrigerant will cool anywhere from poorly to not at all.

If, as I assume, your '15 is out of warranty then quit taking it to Ford. Take it to a dedicated automotive ac shop. They'll have the experience and equipment to identify your problem without dicking you around.
