It will all work, and work Great.

Even a 680hp engine stays below 510hp most of the time.

For example, lets say, 680hp supercharged coyote makes 510hp at 4,500rpm. Below that, exhaust pressure will be within normal performance range. Above 4,500rpm pressure will increase slightly. But I doubt it will drop peak hp by more than 5%. If someone makes 680hp peak on huge exhaust, reasonably sized (2.5") performance exhaust will do at least 650hp. I'll trade 15-30hp at an rpm used <5% of the time for good sound 100% of the time.

I'm not saying all big exhaust sound bad. Just seems like you and I both prefer Ford Racing's 2.5" sound.

Question, if I install Long Tubes with hi-flow cats will I free the restriction enough to negate having 2.5 vs 3.0? Or will there still be a 5% drop in peak hp even still?

I am still getting the Ford Racing 2.5 as a matter of fact I ordered it already from http://www.levittownfordsupercenter.com and saved almost $300 compared to everyone else. I love their customer service as I have been buying from them for years and their prices are second to none.

It's all relative.
if...
680hp w/ 3"
650-660hp w/ 2.5"
and
700-710hp w/ 3" & long tube headers
then
670-690hp w/ 2.5" & long tube headers

these of course are just very basic estimates.
