How much difference would be felt in the handling between the 19 x 8.5 vs. 19 X 9 wheels if they were wearing the same 255/40 tire?
Not much. The 8.5" rim is wide enough for the 255s and I think there would be only a modest different in steering response between the two, probably small enough that you wouldn't notice unless you drove them back to back, which you likely won't.

What happens if you get a flat on the 20's? No spare? Where does the spare sit for the 19's? Under car or in trunk?
From my understanding, no GT's have spare tires. My base GT doesn't. I'm buying the 20's in a week. Will have to figure something out I guess. Neither does my buddies premium or my other friends premium PP.

It's not standard equipment, but it's a $195 option.

If you have the brembos from the PP, the spare offered wouldn't fit anyway. If you have big brakes, you'll have to figure out a different solution for a spare... you could perhaps find a spare rim or skinny rim that'll clear the brakes and fit it in the wheel well, or go with a full size rim and just live with the tire sticking up in your trunk at all times.

Or some would say keep running without a spare, but I'm too paranoid to do that. I'd rather not be stranded if I can help it.

19s will perform better, all you need to do is put lowering springs like ford racing springs, eibach pro, eibach sportline etc and it will close the gap between fender and tire. This makes the 19s look bigger and better. Theres too big of a wheel gap from the factory. amazing what a 1 inch drop does to the look of the wheels.

My Base GT had a spare. My GT with the PP doesn't have a spare. Not sure if it's an option or not.
