Just seems my GT head temps fluctuate rapidly under normal driving conditions.
Spark, thermostat are the 2 biggest factors in cylinder head temps. Spark is never static, it's always variable and the later the plug fires, the hotter the head gets. Minute changes in the thermostat opening/closing also plays a role. So does the electric fan wash. So those fluctuations of a few degrees is NORMAL.

Cht under 225° I wouldn't worry. My temps jump up over 200° quick once temps get in the 80s but when they hit 115°+ I'm still only seeing 212ish normally. That is with the pp radiator though. Only time I've passed 225° is after boost while driving it hard for extended periods of time. Not recommended imo.
