To the OP: how valuable is your time? What do you like to do as a hobby? Are you concerned about the future value of your car?
If you like to work on cars, then go ahead and mod the snot out of a ‘16 GT. Just realize that if you eventually have to sell the car, you will be selling ... a ‘16 GT. All of those mods will have zero to negative impact on the resale price.
Ultimately, you must test-drive the models you are interested in. How is the fit/feel? Are there features that are must-haves? Only you can answer those questions.
