Car takes engine power and converts it to movement.
Driving style being the same, sport mode gives you more power and uses the fuel more efficiently to get that power.
Result, engine doesn't need to work as hard or use as much gas to create the amount of power to get the same amount of movement.
Now whether that accounts for the extreme difference in MPG you have, I doubt it. But I definitely noticed a 1-3 MPG improvement when I started driving in sport mode instead of normal.

The engine doesn't make any more power in sport mode. It only makes the throttle more sensitive, and in the case of the automatic, changes the shift points.I think it's a matter of math.
