You are building your V6 for more straight line right?
It's my daily driver. It will, and has already, hit the 1/4 mile track fairly regularly - but I don't want to full on sacrifice ride / handling for straight line performance. It's not out of the realm of possibility it might see some local autocross action.

I just don't want to sacrifice comfort to the point I don't look forward to driving it. I have to traverse some pretty shitty roads on a regular basis.

You mean the ride height being lower?
I'd say contact Ford Performance, but honestly I think their response would be the canned "It wasn't tested on that application" kind of response.

The ONLY difference between the V6 / GT / EB when it comes to bolting on suspension parts is the weight, and the original parts it was equipped with.

I would think them not listing it as fitting the V6 application would have more to do that the V6 mustang isn't being made anymore at the present time.

I'm been researching and the V6 is within 10 lbs of the EB and the only thing I can think might be different is the weight distribution , but hell the kit Ford has is for both the GT and the EB where there is even a bigger difference.

I'd say more of keeping the V6 as the base model to improve the Ecoboost in comparison and phase out the V6. There are a few things that are actually different between the models (like exhaust and engine height for STBs), but many of these other components can be interchanged quite easily.

Actually exhaust between the V6 / GT is identical as far as mounting / installation. I LITERALLY have a MBRP GT cat back installed in my V6 car and it required ZERO mods and bolted right up.

I thought the Ecoboost is different (y) is what I was referring to, but thinking about it I've seen multiple exhausts that are for V6/Ecoboost so who knows.

I've got the GT exhaust on mine and it bolts right up but you can't do a cut/clamp for GT axlebacks on the V6 without an adapter. You're right that the point remains of the part itself being easily swappable between the models.
