I’m buying a new pair of wheels for my s550. The wheels on it now are 19x8.5 Offset 42.5mm, Tire size 255 40 R19.
I am buying some 19x9.5 offset 35mm and I want to get a little bit smaller tires because I am lowered on BC Coils with -7 or so camber.
I don’t want to worry about running my tires so stretched that I might debead and always having to fill up with air.

I did the same and installed 275/35's on all four. This results in about 0.5 inch smaller overall diameter. It rides and handles nicely. Because you are already lowered, this is probably what would work best.

Another option is 275/40's. This will theoretically provide a more comfortable ride and increases the overall diameter by 0.7 inches. I believe that this tire, when coupled with Steeda minimum drop (0.5 inch) springs will result in almost stock ride height and is my next setup to try, once I wear out the 275/35 tires.

The final option is a 285/35 size tire. This will give you stock ride height, but is the widest tire that's recommended for a 9.5 rim. Check your selected tire specs to make sure that the 9.5 rim will work as it's on the edge of the range.
